2 large poblano peppers
4 chicken breasts
3 tbsp olive oil or butter, divided
1/2 large onion, sliced
2 large garlic cloves, minced
1 cup low-sodium chicken stock
3/4 cup heavy cream
1 tbsp lime juice
1 tsp honey
1 cup packed cilantro leaves
Instructions
Roast the poblano peppers over an open flame or under a broiler until charred. Place in a plastic bag to steam for easy peeling.
In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Season chicken breasts with salt and pepper and sear until golden brown on both sides. Remove and set aside.
In the same skillet, add remaining oil and sauté sliced onions and minced garlic until tender.
Blend the roasted poblano, cilantro, salt, and chicken stock until smooth. Add this mixture back to the skillet along with heavy cream, lime juice, honey, and additional chicken stock.
Return chicken to the skillet; cover and simmer for 10-15 minutes until cooked through.
