  • 6 cloves garlic (finely diced)
  • 5 ounces sun-dried tomato strips (drained)
  • 3 cups baby spinach leaves
  • 1/3 cup dry white grape juice (optional)
  • 1 3/4 cups half-and-half
  • 2 tablespoons butter
  • 2 teaspoons olive oil
  • Fresh parsley (for garnish)

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Season salmon fillets with salt and pepper, then sear them skin-side up for about 5 minutes until golden brown. Flip and cook for an additional 3-4 minutes until cooked through.
  2. Remove the salmon from the skillet and set aside. In the same skillet, melt butter and sauté diced onions until soft. Add minced garlic and cook until fragrant.
  3. If using, pour in dry white grape juice, allowing it to reduce slightly before adding sun-dried tomatoes and half-and-half. Stir well.
