Ingredients

  • 4 cups sweet corn (fresh or frozen)
  • 12 slices crispy turkey bacon, finely chopped
  • 1/4 cup green onions, chopped
  • 1 jalapeño, finely diced
  • 1/2 cup Ranch salad dressing
  • 1 cup shredded cheddar cheese
  • Juice of 1 lime
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • Salt and pepper to taste

Instructions

  1. If using fresh corn, wash and cut off the kernels; if using frozen, measure out four cups.
  2. Cook turkey bacon until crispy and chop into small pieces.
  3. In a large mixing bowl, combine corn, bacon, green onions, jalapeño, Ranch dressing, cheddar cheese, lime juice, mayonnaise, and sour cream.
  4. Season with salt and pepper to taste.
  5. Mix gently until well combined; chill in the refrigerator for at least 30 minutes before serving.
