  • 1 ½ cups frozen corn, thawed and drained
  • 1 cup finely chopped red bell pepper

  • ¼ cup seeded and finely chopped jalapeño chile
  • ½ cup mayonnaise
  • ½ cup sour cream
  • 2 tablespoons lime juice
  • 1 tablespoon adobo sauce
  • 2 teaspoons taco seasoning mix
  • ½ teaspoon kosher salt
  • ½ teaspoon ground cumin

Instructions

  1. In a large mixing bowl, combine shredded coleslaw mix, rinsed black beans, thawed corn, chopped red bell pepper, cilantro, and diced jalapeño.
  2. In another bowl, whisk together mayonnaise, sour cream, lime juice, adobo sauce, taco seasoning, salt, and cumin until smooth.
  3. Pour the dressing over the vegetable mixture and gently toss until everything is well coated.
  4. Allow the coleslaw to chill in the refrigerator for at least 30 minutes before serving for enhanced flavor.
