Ingredients

Scale
  • 1 1/2 pounds boneless skinless chicken thighs
  • 4 tablespoons lemon juice
  • 4 tablespoons extra virgin olive oil
  • 4 cloves garlic (minced)
  • 2 teaspoons ground cumin
  • 2 teaspoons paprika
  • 1 teaspoon turmeric
  • 1/2 teaspoon ground cinnamon
  • Salt and pepper to taste
  • For the sauce: 1/4 cup mayonnaise
  • 1/4 cup full-fat Greek yogurt
  • 1 tablespoon lemon juice

Instructions

  1. Marinate the chicken: In a large ziplock bag, combine chicken thighs with lemon juice, olive oil, minced garlic, cumin, paprika, turmeric, cinnamon, salt, and pepper. Seal the bag and massage until evenly coated. Refrigerate for at least one hour or overnight.
  2. Preheat your oven to 425°F (220°C).
  3. Arrange the marinated chicken in a greased baking dish in a single layer.
  4. Bake for about 15 minutes until golden brown.
  5. For crispy edges, switch to broil for an additional 1-2 minutes—watch carefully!
  6. Let the chicken rest for five minutes before slicing against the grain.
  7. For the sauce: Mix mayonnaise, Greek yogurt, and lemon juice until smooth.
  8. Serve slices of Chicken Shawarma with fresh veggies and drizzled sauce.
