  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon dried parsley
  • 1 teaspoon salt (divided)
  • 1/4 teaspoon black pepper
  • 1/2 cup bread crumbs
  • 1 egg
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 ribs celery, diced
  • 2 carrots, peeled and diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 4 cups water (or adjust based on preference)
  • 1 cup small pasta (like orzo or ditalini)
  • 2 cups spinach, roughly chopped

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine ground chicken, onion powder, garlic powder, dried parsley, half of the salt, black pepper, bread crumbs, and egg. Mix until well incorporated.
  3. Form tablespoon-sized meatballs and place them on the lined baking sheet. Bake for about 15 minutes or until golden brown and cooked through.
  4. In a large pot or Dutch oven, heat olive oil over medium heat. Add diced onions, celery, and carrots; sauté for about 3-4 minutes until tender. Stir in minced garlic and remaining salt; cook for another minute.
  5. Pour in chicken broth and water; bring to a boil. Add pasta and cook according to package instructions.
  6. Once cooked, gently stir in the baked meatballs and chopped spinach; simmer for an additional five minutes before serving.
