3/4 cup granulated sugar
1 teaspoon cinnamon
1/2 teaspoon nutmeg

1/2 cup unsweetened applesauce
1/4 cup milk (or dairy-free alternative)
1/4 cup melted butter (or vegetable oil)
1 1/2 teaspoons vanilla extract
1 cup grated carrots
1/3 cup granulated sugar (for topping)
1/3 cup brown sugar (for topping)
1/4 cup chopped walnuts (or pecans)
1 1/2 cups very hot water
Instructions
Preheat your oven to 350°F (175°C). Prepare an 8-inch rectangular casserole dish by greasing it lightly.
In a mixing bowl, combine the flour, baking powder, salt, granulated sugar, cinnamon, nutmeg, and cloves until well blended.
In another bowl, mix together the applesauce, milk, melted butter or oil, vanilla extract, and grated carrots.
Pour the wet ingredients into the dry mixture and stir gently until combined but do not over-mix.
Spread the batter evenly in the prepared casserole dish.
In a separate bowl, combine the granulated sugar, brown sugar, and chopped walnuts. Sprinkle this topping evenly over the batter without stirring it in.
Carefully pour very hot water over the entire dish; this creates a luscious caramel layer as it bakes.
Bake for 40-50 minutes or until golden brown and set in the middle. Allow to cool for about 5-10 minutes before serving.
