4–5 lbs salmon
1 cup brown sugar
¼ cup kosher salt
¾ cup 100% maple syrup
¼ cup honey
Instructions
Cut the salmon into approximately 1-inch cubes.
In a large bowl, mix brown sugar, kosher salt, maple syrup, honey, and two cups of water until well combined.
Add the salmon cubes to the marinade and stir until fully coated. Cover and refrigerate for at least three hours or overnight.
Preheat your smoker to 180°F (82°C) and line grates with aluminum foil.
Place marinated salmon cubes on the grates with space between them.
Smoke for about four to five hours, flipping every 45 minutes and brushing with leftover marinade glaze until they reach an internal temperature of 160°F (71°C).
Allow to rest briefly before serving on a platter.
