  • 1/2 cup shallots (finely minced)
  • 1 cup red bell pepper (finely chopped)
  • 1 cup celery (finely chopped)
  • 3 tbsp Dijon mustard
  • 1 1/2 cups mayonnaise
  • 3 tbsp apple cider vinegar
  • 1 tbsp fresh lemon juice
  • 1 tsp Cajun seasoning
  • Fresh parsley (for garnish)

Instructions

  1. Boil the elbow macaroni in salted water until al dente, about 9 minutes. Drain and rinse under cold water.
  2. In a separate bowl, whisk together Dijon mustard, mayonnaise, apple cider vinegar, lemon juice, Cajun seasoning, shallots, red bell pepper, celery, salt, and pepper until smooth.
  3. Combine the cooled macaroni with the dressing mixture in a large bowl. Mix gently to coat evenly.
  4. Chill in the refrigerator for at least one hour before serving.
  5. Garnish with chopped parsley before serving.
