  • 1 yellow bell pepper (sliced)
  • 1 red onion (sliced)
  • 3 cloves garlic (minced)
  • 2 tablespoons vegetable oil (for grilling)
  • Tortillas (flour or corn, for serving)
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • ½ teaspoon smoked paprika
  • ½ teaspoon kosher salt
  • ¼ teaspoon ground black pepper

Instructions

  1. In a small bowl, mix chili powder, cumin, smoked paprika, kosher salt, and black pepper.
  2. Slice the flank steak against the grain into thin strips and marinate with 1 tablespoon olive oil and half of the spice mix.
  3. In another bowl, combine sliced bell peppers and onion with remaining olive oil and spice mix.
  4. Preheat your Blackstone griddle over medium-high heat for about 5 minutes; add vegetable oil once hot.
