  • 1/4 cup pine nuts (or sunflower seeds/walnuts)
  • 2 tbsp olive oil
  • 1/2 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 tbsp fresh sage, chopped
  • 1 1/2 cups pumpkin puree
  • 1/2 cup vegetable broth
  • 1/2 cup plant-based milk (unsweetened)
  • 1 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Boil salted water in a large pot; cook pasta according to package instructions until al dente. Reserve 1/2 cup pasta water before draining.
  2. In a skillet, toast pine nuts over medium heat until golden; set aside.
  3. In the same skillet, heat olive oil and sauté onions until translucent. Add minced garlic and cook for another minute.
  4. Stir in pumpkin puree, vegetable broth, plant-based milk, salt, and pepper; simmer for about 5 minutes.
  5. Blend sauce until smooth; return to skillet with drained pasta, mixing until well-coated. Adjust consistency with reserved pasta water if necessary.
  6. Serve topped with toasted pine nuts and additional sage if desired.
