2 cans (15-ounce) chickpeas, drained and rinsed
1/2 cup red onion, finely chopped
1 cup cherry tomatoes, halved
1 cucumber, peeled, seeded, and diced
1/2 cup Kalamata olives, pitted and halved
4 ounces feta cheese, crumbled
1/4 cup fresh parsley, chopped
1/4 cup fresh mint, chopped
1/4 cup extra virgin olive oil
3 tablespoons freshly squeezed lemon juice
1 clove garlic, minced
1/2 teaspoon dried oregano
Salt and black pepper to taste
Instructions
Rinse the chickpeas under cool water until well-drained. Set aside.
In a large mixing bowl, combine the chickpeas, red onion, cherry tomatoes, cucumber, Kalamata olives, parsley, mint, and feta cheese.
In a separate bowl, whisk together olive oil, lemon juice, garlic, oregano, salt, and pepper until well combined.
