  • 2 shallots
  • 1/4 cup lemongrass
  • 1/3 cup fish sauce
  • 3 tablespoons oyster sauce (vegetarian version if desired)
  • 3 tablespoons lime juice
  • 3 tablespoons pure maple syrup
  • 2 tablespoons brown sugar
  • 1 inch fresh ginger
  • 5 garlic cloves
  • 1 tablespoon toasted sesame oil
  • 1 tablespoon vegetable or canola oil
  • 1 tablespoon Asian chili sauce
  • 1 tsp ground coriander
  • 1 tsp Chinese five spice
  • 1/2 cup rice vinegar
  • 1/2 cup water (for pickling)
  • 2 tablespoons sugar (for pickling)
  • 1 teaspoon salt (for pickling)
  • 1 cup matchstick carrots
  • 1 cup daikon (or radishes)
  • 3/4 cup mayonnaise
  • 68 soft French baguettes

Instructions

  1. In a blender, combine shallots, lemongrass, fish sauce, oyster sauce, lime juice, maple syrup, brown sugar, ginger, garlic, toasted sesame oil, vegetable oil, and chili sauce. Blend until smooth.
  2. Coat the beef in this marinade and refrigerate for at least 30 minutes (up to overnight).
  3. In a medium bowl or jar, mix together rice vinegar, water, sugar, and salt until dissolved. Add matchstick carrots and daikon; let them sit for about 30 minutes.
  4. Remove excess marinade from beef and sear in a hot skillet with vegetable oil for about 3-4 minutes on each side until caramelized and cooked to your liking. Let rest before slicing.
  5. Spread mayonnaise inside toasted baguettes; layer with sliced beef and pickled vegetables.
