  • 8 medium ripe bananas, sliced
  • 4 Tbsp salted butter (plus 1 Tbsp for baking dish)
  • 1/2 cup heavy cream (or coconut cream)
  • 1/3 cup light corn syrup
  • 2/3 cup packed light brown sugar
  • 6 Tbsp dark vanilla extract (alcohol-free) & 1 tsp pure vanilla extract
  • 1 cup quick-cooking oats
  • 3/4 cup packed light brown sugar (for topping)
  • 1/2 cup all-purpose flour
  • 1 tsp ground cinnamon
  • 1/4 tsp salt
  • 1/2 cup cold salted butter, cubed
  • 1/2 cup roughly chopped walnuts

Instructions

  1. Preheat oven to 350°F (175°C) and grease a baking dish with melted butter.
  2. In a skillet, melt butter over medium heat; add heavy cream, corn syrup, and brown sugar until dissolved. Remove from heat and stir in vanilla extract.
  3. Gently toss bananas in the sauce and pour into the prepared baking dish.
  4. In a bowl, combine oats, brown sugar, flour, cinnamon, and salt. Cut in cold butter until crumbly; fold in walnuts.
  5. Sprinkle oat mixture over the banana layer and bake for 30-40 minutes until golden brown and bubbly.
  6. Let cool for five minutes before serving with vanilla ice cream.
