  • 2 small ripe mangoes (peeled and cubed)
  • 4 whole avocados (peeled and cubed)
  • Juice of 1 whole lemon
  • 1 large clove garlic (mashed)
  • ¾ tsp salt (or to taste)
  • 2 tbsp cilantro (finely chopped)
  • ½ small red onion (finely diced)
  • 1 cup cherry tomatoes (halved)
  • 23 tbsp olive oil

Instructions

  1. Prep all ingredients by finely dicing the onion, mashing the garlic, and cubing the mangoes and avocados.
  2. In a large mixing bowl, combine the cubed mangoes and avocados.
  3. Add halved cherry tomatoes, diced red onion, mashed garlic, and chopped cilantro.
  4. Squeeze in fresh lemon juice and drizzle olive oil over the mixture.
  5. Sprinkle with salt to taste and gently toss to combine without mashing the avocado.
  6. Chill for about 30 minutes before serving to let flavors meld.
