  • 2 chicken breasts, finely diced
  • 2 tbsp hoisin sauce
  • 1 tbsp sesame oil
  • 1 tbsp soy sauce
  • 2 cloves garlic, minced
  • 1 tsp minced fresh ginger
  • 1 bag coleslaw mix (397g)
  • 4 green onions, thinly sliced
  • 1 tbsp sesame oil (for slaw)
  • 1 tbsp rice vinegar
  • 1 tbsp honey
  • 16 wonton wrappers
  • Cooking spray or olive/canola oil (for baking)
  • Sweet chili sauce (to serve)
  • Chopped cilantro (to serve)
  • Sesame seeds (to serve)

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a muffin tin.
  2. In a large skillet, heat 1 tablespoon of sesame oil over medium heat. Add the diced chicken and cook until golden brown.
  3. Stir in hoisin sauce, soy sauce, garlic, and ginger; cook until the chicken is fully cooked.
  4. In a separate bowl, combine coleslaw mix, green onions, sesame oil, rice vinegar, and honey; mix well.
  5. Press wonton wrappers into muffin cups and lightly spray with cooking oil. Bake for 8-10 minutes until golden brown.
  6. Fill each baked wonton cup with the chicken mixture and top with slaw.
  7. Drizzle sweet chili sauce over the tacos and garnish with cilantro and sesame seeds before serving.
