  • 1 Tablespoon lemon juice
  • 3/4 teaspoon cinnamon
  • 1/4 cup sugar
  • 2 teaspoons cornstarch
  • 1 teaspoon vanilla extract
  • 8 egg roll wrappers
  • Vegetable oil (for frying)

Instructions

  1. In a medium saucepan over medium heat, combine diced apples, lemon juice, cinnamon, and sugar. Cook until bubbling.
  2. In a small bowl, whisk cornstarch with 1/3 cup water until smooth. Add to the apple mixture and stir until thickened.
  3. Remove from heat and mix in vanilla extract; let cool.
  4. Place egg roll wrappers on a clean surface. Spoon about 1/4 cup of cooled apple mixture onto each wrapper's lower third. Roll tightly, folding sides inward and sealing with water.
  5. Heat vegetable oil in a heavy pot to 360°F. Fry egg rolls in batches until golden brown (about 3-4 minutes).
  6. Transfer to paper towels to drain excess oil and allow to cool slightly before serving.
