  • 3 small apples (or 2 large), cored and roughly chopped

  • 3 tablespoons all-purpose flour
  • 1/2 teaspoon ground mustard
  • 1/4 teaspoon smoked paprika
  • 1 cup beef broth
  • 1 1/2 cups chicken or vegetable stock
  • 1/2 cup heavy cream
  • 8 ounces shredded sharp cheddar cheese (about 3 cups)
  • Extra shredded cheddar cheese for garnish
  • Sliced green onions (scallions) for garnish
  • Pepitas (pumpkin seeds) for garnish

Instructions

  1. Heat olive oil in a large saucepan over medium-high heat. Add onions and celery; sauté for about 5–10 minutes until softened.
  2. Stir in chopped apples and cook for another 5 minutes.
  3. Sprinkle flour, ground mustard, and smoked paprika over the mixture; stir to combine and cook for about 30 seconds.
  4. Gradually add beef broth while stirring continuously to avoid clumps. Then add chicken or vegetable stock along with salt to taste. Bring to a simmer.
  5. Simmer for 20–30 minutes until vegetables are tender. Blend until smooth using an immersion blender.
  6. Turn off the heat; stir in heavy cream and shredded cheddar cheese until melted and creamy.
  7. Serve hot, garnished with extra cheddar cheese, sliced green onions, and pepitas.
