  • 19 oz kidney beans (rinsed and drained)
  • 15 oz chickpeas (rinsed and drained)
  • 1/2 cup olive oil
  • 4 tbsp fresh lemon juice
  • 3 tbsp apple cider vinegar
  • 2 tsp Dijon mustard
  • 2 garlic cloves (minced)
  • 3/4 tsp oregano
  • 1/4 tsp red pepper flakes
  • 1/2 tsp salt
  • Black pepper
  • 1/2 cucumber (diced)
  • 1 pint cherry tomatoes (halved)
  • 1 bell pepper (diced)
  • 1/2 cup kalamata olives (pitted and halved)
  • 1/2 cup parsley (freshly chopped)
  • 1/2 cup red onion (thinly sliced)
  • 2 tbsp basil (fresh chopped)
  • 3/4 cup feta cheese (crumbled)

Instructions

  1. In a mixing bowl, whisk together olive oil, lemon juice, apple cider vinegar, Dijon mustard, minced garlic, oregano, red pepper flakes, salt, and black pepper until emulsified.
  2. Rinse the beans under cool water in a colander to remove excess sodium.
  3. Dice cucumber and bell pepper; halve cherry tomatoes.
  4. In a large bowl, combine rinsed beans, diced vegetables, chopped herbs, and feta cheese.
  5. Drizzle dressing over the salad; toss gently to coat all ingredients evenly.
