  • 100g shrimp
  • 1 garlic clove (minced)
  • 1 yellow onion (sliced)
  • 120g white mushrooms (sliced)
  • 1 carrot (cut matchstick-style)
  • 2 tablespoons neutral oil
  • 1 tablespoon soy sauce
  • 1 teaspoon rice vinegar
  • 1 teaspoon brown sugar
  • 2 teaspoons toasted sesame oil

Instructions

  1. Cook udon noodles according to package instructions, rinse under cold water, and toss with a bit of oil to prevent sticking.
  2. In a hot pan, heat 1 tablespoon of oil and sauté minced garlic until fragrant. Add mushrooms, onions, and carrots; stir-fry until softened.
  3. Add another tablespoon of oil and cook shrimp with soy sauce and salt until pink and opaque.
  4. Combine cooked udon noodles with shrimp in the pan on high heat; stir continuously for slight crispiness.
  5. Pour sauce mixture over everything in the pan, stirring until well-coated.
  6. Mix in sautéed vegetables and serve warm.
