  • 1 large sweet potato (about 12 ounces), diced
  • 1 lb flat iron steak, diced
  • 3 tbsp olive oil
  • 2 cloves garlic, minced
  • 2 bell peppers (red or yellow), diced
  • 4 green onions, sliced
  • 2 tbsp coconut aminos
  • 1 tsp sea or kosher salt
  • 2 tsp cracked black pepper
  • 2 tbsp fresh chopped cilantro

Instructions

  1. Prepare the sweet potatoes by dicing them into 1-inch cubes. Microwave with salt in a covered bowl for 4-6 minutes until tender.
  2. Heat 2 tbsp olive oil in a skillet over high heat. Sear the diced steak for about 10 minutes until browned and cooked to your liking. Remove and set aside.
  3. In the same skillet, add the remaining olive oil. Toss in the sweet potatoes and cook for about 3-4 minutes until golden brown.
  4. Make a well in the center of the skillet; add minced garlic and sauté until fragrant. Then add bell peppers and scallions, cooking for an additional 3-4 minutes.
  5. Return the steak to the skillet along with coconut aminos; stir everything together gently until combined and heated through.
  6. Finish with fresh cilantro before serving.
