  • 4 oz pancetta, diced
  • 2 pounds ground pork
  • 2 carrots, diced
  • 2 stalks celery, diced
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 1 cup dry white wine
  • 2 cups chicken broth
  • 1 cup whole milk
  • Fresh thyme and rosemary

Instructions

  1. In a Dutch oven, cook diced pancetta over medium-high heat for 5–10 minutes until browned. Remove and set aside.
  2. Add diced carrots, celery, and onion to the pot; sauté for 10–15 minutes until softened.
  3. Increase heat to medium-high; add ground pork and garlic. Cook for 5–8 minutes, seasoning lightly with salt.
  4. Deglaze the pot with white wine; simmer for 5 minutes until slightly reduced.
  5. Stir in chicken broth, bay leaves, thyme, rosemary, nutmeg, and parmesan rind. Cover and simmer on low for 1 hour.
  6. Stir in whole milk; cover and cook for another 45–60 minutes until thickened.
  7. Skim excess grease from the top; adjust seasoning before serving.
