  • 1/2 cup diced red onion
  • 1/2 cup pistachios
  • 1/2 cup crumbled feta cheese
  • 1/2 cup golden raisins
  • 1/4 cup sliced kalamata olives
  • 1/4 cup chopped parsley
  • 1/4 cup chopped mint
  • 3 tablespoons fresh chopped dill
  • 1/4 cup extra virgin olive oil
  • 1/4 cup fresh lemon juice
  • 1 tablespoon honey or maple syrup
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper

Instructions

  1. In a large bowl, combine cooked quinoa, drained chickpeas, chopped cucumber, diced red onion, pistachios, crumbled feta cheese, golden raisins, sliced kalamata olives, parsley, mint, and dill.
  2. In a separate jar or bowl, whisk together olive oil, fresh lemon juice, honey (or maple syrup), salt, and pepper.
