  • 1 (14-16 oz / 400-450g) block Extra-Firm Tofu
  • 2 tbsp Soy Sauce (or Tamari for Gluten-Free)
  • 1 tbsp Cornstarch
  • 1 tbsp Neutral Oil (like Avocado or Canola)
  • ½ cup Low-Sodium Soy Sauce (or Tamari for Gluten-Free)
  • ½ cup Water (or Vegetable Broth)
  • ¼ cup Maple Syrup (or Agave Nectar)
  • 2 tbsp Rice Vinegar
  • 1 tbsp Toasted Sesame Oil
  • 2 cloves Garlic
  • 1 tbsp Fresh Ginger
  • 1 tbsp Cornstarch mixed with 2 tbsp cold water (slurry)
  • Optional: Pinch of Red Pepper Flakes
  • 8 oz (225g) Noodles (Udon, Soba, Ramen, or Spaghetti)
  • 1 tbsp Neutral Oil for sautéing the vegetables
  • 1 large head Broccoli
  • 2 medium Carrots
  • 1 Red Bell Pepper
  • 45 Green Onions
  • 1 cup Edamame (Shelled, fresh or frozen)
  • Optional Garnish: Toasted Sesame Seeds, Extra Sliced Green Onions

Instructions

  1. Press and cube the tofu; coat with soy sauce and cornstarch.
  2. Cook tofu in a skillet until golden brown on all sides.
  3. In a saucepan, combine soy sauce, water, maple syrup, vinegar, sesame oil, garlic, ginger, and red pepper flakes. Simmer and thicken with cornstarch slurry.
  4. Sauté broccoli first, then add carrots and red bell pepper until tender-crisp.
  5. Cook your noodles according to package instructions; mix with sautéed veggies and teriyaki sauce.
  6. Serve topped with crispy tofu and optional garnishes.
