  • 1 flax egg (1 tablespoon ground flaxseed mixed with 3 tablespoons water)
  • 1 1/2 cups + 3 tablespoons all-purpose flour
  • 1 teaspoon ground cinnamon (or pumpkin pie spice)
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Instructions

  1. Prepare the flax egg by mixing ground flaxseed with water in a small bowl; let it sit for about 5 minutes.
  2. In a large bowl, cream together room-temperature vegan butter, brown sugar, and granulated sugar until fluffy.
  3. Stir in maple syrup, vanilla bean paste, and flax egg until well combined.
  4. In another bowl, whisk together flour, cinnamon (or pumpkin pie spice), baking powder, and salt; gradually add to wet ingredients until just combined.
  5. Gently fold in chopped pecans.
