  • 1 medium spaghetti squash
  • 1 pound boneless, skinless chicken, cut into bite-sized pieces
  • Salt and pepper, to taste
  • 1 teaspoon Italian seasoning
  • 2 tablespoons butter, divided
  • 4 cloves garlic, minced
  • 1 shallot, minced
  • 2 tablespoons sun-dried tomatoes packed in oil, drained and julienned
  • 1 cup heavy cream
  • ⅓ cup grated Parmesan cheese
  • 3 ounces baby spinach
  • Fresh parsley, for garnish (optional)

Instructions

  1. Cook spaghetti squash in the microwave or oven until tender; let cool before handling.
  2. Season chicken with salt, pepper, and Italian seasoning. Sauté in melted butter until golden brown; set aside.
  3. In the same skillet, add remaining butter and sauté garlic and shallots until softened. Add sun-dried tomatoes.
  4. Stir in heavy cream; let bubble gently before adding Parmesan cheese and spinach until melted. Return cooked chicken to skillet.
  5. Halve cooled spaghetti squash, scrape out seeds, and shred into strands with a fork.
  6. Combine spaghetti squash with the creamy mixture; serve hot with optional parsley garnish.
