  • 1/2 teaspoon Ground Black Pepper
  • 2 lbs Ground Turkey
  • 2 tablespoons Thyme
  • 1 teaspoon Salt
  • 1 (15 ounce) can Pumpkin Puree
  • 2 (15 ounce) cans Cannellini Beans (drained)
  • 2 cups Chicken Broth
  • 1/2 cup Heavy Cream (or Coconut Cream for a dairy-free option)

Instructions

  1. Heat olive oil in a large stockpot over medium-high heat. Add diced onion and chopped carrots; sauté until softened.
  2. Stir in minced garlic, ground coriander, smoked paprika, cumin, and black pepper; cook briefly to release flavors.
  3. Push veggies aside and add ground turkey, breaking it apart as it browns until fully cooked.
  4. Mix in thyme, salt, pumpkin puree, cannellini beans, and chicken broth; bring to a simmer.
  5. Reduce heat and partially cover pot; simmer for 25 minutes to let flavors meld.
  6. Stir in heavy cream (or coconut cream) until combined; adjust seasoning if needed.
