  • 4 cups peeled butternut squash (1-inch cubes)

  • 10 ounces pasta (rigatoni, penne, or farfalle)
  • 2 cloves garlic (minced)
  • 1 lemon (juiced)
  • 1/2 cup shredded parmesan cheese
  • Olive oil
  • Salt
  • Pepper
  • Red pepper flakes
  • 1/2 diced shallots
  • 2 teaspoons fresh thyme leaves

Instructions
