  • 3 cups cooked jasmine rice
  • 1/2 lb shrimp
  • 8 oz can of pineapple chunks
  • 1/2 cup pineapple juice
  • 3 tbsp soy sauce
  • 2 tbsp honey
  • 1 tbsp lime juice
  • 1/41/2 tsp chili powder (to taste)
  • Salt (to taste)
  • 1/2 Tbsp fresh minced cilantro
  • Zest from 1 lime
  • Juice from 1 lime

Instructions

  1. Cook jasmine rice according to package instructions; fluff and mix in minced cilantro.
  2. In a bowl, combine pineapple juice, soy sauce, honey, lime juice, lime zest, chili powder, and cilantro to create the sauce.
  3. Marinate the shrimp with lime juice, pineapple juice, chili powder, and salt for at least 15 minutes.
  4. Sear marinated shrimp in a hot pan until pink and opaque; remove from pan.
  5. Caramelize drained pineapple chunks in the same pan until browned.
  6. Combine shrimp and pineapple with prepared sauce; simmer briefly.
  7. Serve over cilantro jasmine rice.
