  • 100 g granulated sugar
  • 100 g dark brown sugar
  • 1 egg (room temperature)
  • 1 tsp vanilla extract
  • 230 g all-purpose flour
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tbsp instant espresso powder
  • 1/2 tsp salt
  • 180 g mascarpone cheese
  • 90 g confectioners' sugar
  • 120 g heavy cream
  • Cocoa powder (for dusting)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together softened butter, granulated sugar, and dark brown sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until well combined.
  4. In a separate bowl, whisk together flour, baking powder, baking soda, espresso powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture until just combined.
  6. Chill the dough for at least 30 minutes before scooping onto the prepared baking sheet.
  7. Bake for about 11 minutes or until edges are golden but centers remain soft.
  8. Allow cookies to cool completely before topping them with whipped mascarpone cream mixed with confectioners' sugar and vanilla extract.
  9. Dust with cocoa powder before serving.
