  • 2 1/2 cups all-purpose flour, divided
  • 1/2 cup powdered sugar
  • 1 cup cold butter (2 sticks)
  • 4 eggs
  • 2 cups granulated sugar
  • 1/3 cup fresh squeezed lemon juice
  • 1/2 teaspoon baking powder

Instructions

  1. Preheat your oven to 350°F and prepare a 9 x 13-inch baking pan with cooking spray.
  2. For the crust, cream together powdered sugar and cold butter until light and fluffy. Mix in 2 cups of flour until it resembles cornmeal. Press into the bottom of the prepared pan and bake for 15-20 minutes until golden brown.
  3. For the filling, beat together eggs, granulated sugar, and fresh lemon juice in a large bowl. Sift in remaining flour and baking powder; mix until combined.
  4. Pour the filling over the warm crust and return to the oven for another 20-25 minutes until set and lightly browned on top.
  5. Cool completely on a wire rack before cutting into squares and dusting with powdered sugar.
