  • ½ teaspoon ground ginger
  • ¼ teaspoon ground nutmeg
  • ¾ cup canola oil
  • 4 large eggs
  • 1 ½ cups packed light brown sugar
  • ½ cup granulated sugar
  • ½ cup unsweetened applesauce
  • 3 cups grated carrots
  • 8 ounces cream cheese (softened)
  • ½ cup unsalted butter (softened)
  • 2 cups powdered sugar

Instructions

  1. 1. Preheat your oven to 350°F (180°C) and prepare two greased and parchment-lined round cake pans.
  2. 2. In a large bowl, whisk together flour, baking powder, baking soda, cinnamon, ginger, nutmeg, and salt until well combined.
  3. 3. In another bowl, mix oil, eggs, brown sugar, granulated sugar, applesauce, and vanilla until smooth. Stir in grated carrots.
  4. 4. Gradually combine wet ingredients with dry ingredients using gentle folding motions until just mixed.
  5. 5. Pour the batter evenly into prepared pans and bake for 30 to 35 minutes or until a toothpick inserted comes out clean.
  6. 6. Cool cakes in pans for about 20 minutes before transferring them to wire racks to cool completely.
  7. 7. For the frosting, beat cream cheese until smooth; then add softened butter and powdered sugar until creamy.
  8. 8. Once cakes are cooled, layer with frosting between the two layers and cover the top and sides with remaining frosting.
