  • 500 g butternut squash (peeled and cubed)
  • 3 sprigs rosemary (finely chopped leaves)
  • 4 cloves garlic (peeled)
  • 1 yellow onion (finely sliced)
  • 2 tbsp olive oil
  • 500 g shelf-stable gnocchi
  • 50 g grated parmesan
  • Juice of 1 lemon
  • 30 g walnuts (roughly chopped)
  • 75 ml milk
  • 50 g turkey strips (chopped)
  • 1 ball fresh mozzarella (torn into pieces)

Instructions

  1. Preheat your oven to 180ºC.
  2. Spread the butternut squash, onion, and garlic on a baking tray. Top with rosemary and olive oil. Roast for about 30 minutes until tender.
  3. Transfer the roasted vegetables to a blender and purée until smooth, adding water if necessary.
  4. In a frying pan, heat olive oil over medium heat and cook turkey strips until crispy; set aside.
  5. In the same pan, combine the butternut squash purée with water and milk, then add gnocchi. Simmer for about 8-10 minutes until tender.
  6. Stir in parmesan and lemon juice; mix in half of the turkey strips.
  7. Place mozzarella on top and broil for approximately 5 minutes until bubbly.
  8. Garnish with remaining turkey strips, walnuts, and black pepper before serving.
