  • 2 chicken breasts, cooked and chopped
  • 3 cups coleslaw mix
  • 1/2 cup grated carrot (optional)
  • 1/4 cup chopped cilantro
  • 1/4 cup roasted, salted peanuts
  • 46 tortillas
  • 1/4 cup peanut butter
  • 1/4 cup low-sodium soy sauce
  • 2 Tbsp brown sugar or honey
  • 2 Tbsp rice apple vinegar
  • 1/2 Tbsp minced garlic
  • 1/2 Tbsp minced ginger
  • 1 tsp sriracha sauce
  • 12 Tbsp water (optional)

Instructions

  1. Whisk together peanut butter, soy sauce, brown sugar or honey, rice apple vinegar, garlic, ginger, and sriracha until smooth. Adjust thickness with water if necessary.
  2. In a large bowl, mix cooked chicken with coleslaw mix, grated carrot (if using), cilantro, and peanuts. Pour the peanut sauce over the mixture and toss well.
  3. Warm tortillas in the microwave for about 30 seconds for easier rolling.
  4. Divide filling among tortillas and wrap tightly. Serve immediately.
