  • 3 cloves garlic, minced
  • 1 small shallot, finely chopped
  • 1 pound ground beef (85/15)
  • 2 tablespoons soy sauce
  • 1 tablespoon brown sugar
  • 1 tablespoon fresh lime juice
  • 1/2 teaspoon chili flakes or 1 minced Thai chili
  • 1 cup fresh Thai basil leaves, chopped
  • 8 to 10 rice paper wrappers
  • 1/2 cup fresh mint leaves (optional)
  • 1/2 cup cilantro leaves (optional)
  • 1/4 cup sliced green onion (optional)
  • 1/4 cup julienned carrots or cucumbers (optional)
  • 1/4 cup dipping sauce (soy-lime or chili-garlic blend)

Instructions

  1. Heat vegetable oil in a skillet over medium heat. Sauté minced garlic and chopped shallot until fragrant.
  2. Add ground beef and cook until browned, breaking it apart as it cooks.
  3. Stir in soy sauce, brown sugar, and chili flakes; simmer for 2–3 minutes.
  4. Remove from heat and mix in lime juice and chopped Thai basil; let cool slightly.
  5. Soak rice paper wrappers in warm water until soft, then lay flat on a clean surface.
  6. Place a spoonful of the beef filling near the bottom of each wrapper along with any desired veggies or herbs.
  7. Roll tightly while tucking in the sides to secure the filling.
  8. Repeat until all wrappers and filling are used.
