  • 3 tablespoons olive oil
  • 1 pound ground turkey (93% lean)
  • 1 1/2 teaspoons dried oregano
  • 1 teaspoon chipotle chili powder
  • 8 large eggs
  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat oven to 425°F (220°C). Spread frozen potatoes on a large sheet pan and toss with olive oil. Bake until golden and crispy, about 25 minutes, tossing halfway through.
  2. In a skillet over medium heat, cook ground turkey until browned and cooked through, breaking it into smaller pieces.
  3. Stir in oregano, chipotle chili powder, garlic powder, salt, and water; cook for an additional minute.
  4. In a bowl, whisk eggs with salt and pepper. Pour into the same skillet and gently scramble until just cooked through.
