  • 1.5 pounds boneless skinless chicken thighs
  • 1 lime (juiced)
  • 3/4 teaspoon salt
  • 3/4 teaspoon ground black pepper
  • 1 (7-ounce) container plain Greek yogurt
  • 5 cloves garlic (minced)
  • 1 tablespoon minced fresh ginger
  • 1 tablespoon ground cumin
  • 1 tablespoon smoked paprika
  • 1 teaspoon ground turmeric
  • 1/2 teaspoon ground cayenne (optional)

Instructions

  1. In a large bowl, coat chicken thighs with salt, pepper, and lime juice.
  2. In another bowl, combine Greek yogurt, garlic, ginger, cumin, smoked paprika, turmeric, and cayenne.
  3. Add the chicken to the marinade and mix until fully coated. Cover and refrigerate for at least 6 hours or up to 24 hours.
  4. Preheat your oven or broiler to high (450°F).
  5. Line a baking sheet with foil or parchment paper and arrange the marinated chicken without overlapping.
  6. Broil for about 15-20 minutes on one side until charred; flip and cook for another 10 minutes until cooked through (internal temperature of at least 165°F).
  7. Let rest for 5 minutes before serving.
