  • 1 tablespoon pumpkin spice
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 (15 oz) can pumpkin puree
  • 1 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 8 oz cream cheese
  • 1/4 cup granulated sugar
  • 1 large egg yolk
  • 2 teaspoons vanilla extract

Instructions

  1. Preheat your oven to 375°F (190°C) and prepare a muffin pan with paper liners.
  2. In a medium bowl, whisk together flour, pumpkin spice, baking soda, and salt.
  3. In a large bowl, mix pumpkin puree, granulated sugar, brown sugar until smooth. Beat in eggs, vegetable oil, and vanilla. Gradually add dry ingredients until just combined.
  4. In another bowl, beat cream cheese until smooth. Add sugar, egg yolk, and vanilla until well mixed.
  5. Fill muffin tins three-quarters full with batter. Spoon cream cheese mixture on top and gently swirl using a toothpick.
  6. Bake for 18-20 minutes or until a toothpick comes out clean.
