  • ½ cup plant-based butter (melted)
  • 1 cup brown sugar
  • ½ cup non-dairy milk
  • ½ cup flour
  • 1 cup chopped pecans
  • 3 cups mini vegan marshmallows

Instructions

  1. Cook sweet potatoes until tender using your preferred method (boil, slow cooker, or Instant Pot).
  2. Preheat oven to 375°F (190°C). Mash cooked sweet potatoes in a bowl until creamy. Stir in eggs, vanilla extract, melted butter, brown sugar, salt, and non-dairy milk until combined.
