  • 1 cup fresh spinach, chopped
  • ½ cup ricotta cheese
  • ½ cup mozzarella cheese, shredded
  • ¼ cup sun-dried tomatoes, chopped
  • 1 clove garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste

Instructions

  1. Prepare the filling by mixing chopped spinach, ricotta cheese, mozzarella cheese, sun-dried tomatoes, minced garlic, salt, and pepper in a bowl.
  2. Butterfly the flank steak by slicing it horizontally (not all the way through) to create a pocket. Season both sides with olive oil and Italian seasoning.
  3. Spread the filling evenly over one side of the steak. Roll it up tightly and secure with kitchen twine or toothpicks.
  4. Sear the rolled steak in a hot skillet until browned on all sides (about 4-5 minutes per side), then transfer to an oven-safe dish and bake at 375°F (190°C) for 20-25 minutes until cooked through.
  5. Allow it to rest for about 10 minutes before slicing into rounds and serving.
