  • 1 large cucumber (diced)
  • 1/4 cup red onion (finely chopped)
  • 1/4 cup fresh cilantro (chopped)
  • 1/2 cup Greek yogurt
  • 1 tablespoon mayonnaise
  • 1 clove garlic (minced)
  • 1 tablespoon lime juice
  • 1/2 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  1. Preheat grill to medium-high heat and grill corn for about 10-12 minutes until tender and charred.
  2. Carefully remove kernels from the cob and place in a large mixing bowl.
