1/2 cup unsalted butter, melted
1 cup all-purpose flour
3/4 cup old-fashioned oats
1/2 cup granulated sugar
1/4 cup light brown sugar, packed
1/2 teaspoon salt
2 cups coarsely chopped fresh strawberries
1/3 cup granulated sugar for strawberry filling
2 tablespoons lemon juice
2 teaspoons cornstarch
Instructions
Preheat your oven to 350°F (175°C). Line an 8-inch square pan with aluminum foil and lightly spray it with cooking spray.
In a large microwave-safe bowl, melt 1/2 cup unsalted butter.
Mix together 1 cup all-purpose flour, 3/4 cup old-fashioned oats, 1/2 cup granulated sugar, 1/4 cup light brown sugar, and 1/2 teaspoon salt into the melted butter until combined.
Reserve 1 heaping cup of this mixture for the topping and press the remaining mixture into the bottom of the prepared pan.
In another bowl, combine 2 cups coarsely chopped fresh strawberries, 1/3 cup granulated sugar, 2 tablespoons lemon juice, and 2 teaspoons cornstarch. Toss until coated and spread over the crust.
Sprinkle the reserved crumble mixture evenly over the strawberry layer.
Bake for approximately 50 minutes or until golden brown on top and bubbly around the edges.
Allow to cool at room temperature for at least one hour before slicing.
