  • ½ cup soy sauce (or coconut aminos)
  • 3 tbsp maple syrup
  • 2 tbsp sesame oil
  • 2 tbsp rice vinegar
  • 3 cloves minced garlic
  • 1 tbsp grated ginger
  • 3 cups cooked rice
  • 2 cups steamed edamame
  • 1 avocado
  • optional: sesame seeds and spring onions to garnish

Instructions

  1. Prepare the tofu by draining it and pressing to remove excess moisture. Cut into cubes and coat with cornstarch.
  2. In a skillet over medium heat, cook tofu in olive oil until golden brown and crispy.
  3. Whisk together the sauce ingredients in a bowl or blender until combined.
