  • 2 cups water
  • 1 teaspoon salt
  • 3 tablespoons rice vinegar
  • 1 tablespoon granulated sugar
  • 1 pound ahi tuna, finely chopped
  • 3 tablespoons Japanese kewpie mayonnaise
  • 2 tablespoons Sriracha
  • Avocado slices for topping

Instructions

  1. Rinse sushi rice until water runs clear. Combine rinsed rice and water in a pot with salt; bring to a boil, then simmer covered for 15 minutes. Cool slightly before mixing in rice vinegar, sugar, and sesame oil.
  2. In a bowl, mix finely chopped ahi tuna with kewpie mayonnaise, Sriracha, soy sauce, sesame oil, and lime juice until combined.
  3. Shape cooled rice into rectangles on a baking sheet. Heat oil in a pan over medium heat and fry rice pieces until golden brown on both sides.
  4. Top each crispy rice piece with a dollop of spicy tuna and slices of avocado. Garnish with toasted sesame seeds and chives before serving.
