  • 4 cups cooked chicken (chopped into cubes)
  • 1 14-ounce can black beans, drained and rinsed
  • 1 14-ounce can whole corn kernels, drained
  • 1 cup cherry tomatoes (halved)
  • 1 large ripe avocado (diced)
  • â…” cup red onion (thinly sliced)
  • ¾ cup shredded cheddar cheese
  • â…” cup fresh cilantro (chopped)
  • ½ cup plain Greek yogurt
  • 3 Tbsp avocado oil or olive oil
  • 1 Tbsp rice vinegar or apple cider vinegar
  • 2 Tbsp fresh lime juice
  • 1 Tbsp pure maple syrup
  • 2 to 5 chipotle chilis in adobo sauce (to taste)
  • 1 large clove garlic (minced)
  • ½ tsp sea salt (to taste)
  • ¼ tsp black pepper (to taste)

Instructions

  1. Gather all ingredients and ensure chicken is cooked and cubed.
  2. Chop spring greens into bite-sized pieces and place them in a large mixing bowl.
  3. Halve cherry tomatoes and add them to the greens along with rinsed black beans and drained corn.
  4. Dice avocado carefully and add it to the bowl with sliced red onion, shredded cheese, and chopped cilantro.
  5. In a separate bowl, mix Greek yogurt, avocado oil, lime juice, chipotle chilis, garlic, salt, and pepper until smooth.
  6. Pour half of the dressing over the salad mixture; gently toss to combine without mashing the avocados.
