  • 8 thick slices of sourdough bread
  • 3 balls fresh mozzarella (125g each), sliced thin and dried
  • 8 sun-dried tomatoes, dried and chopped
  • 4 tablespoons pesto
  • Butter, as required

Instructions

  2. Spread a tablespoon of pesto on one side of two slices of sourdough.
  3. Layer mozzarella slices and chopped sun-dried tomatoes on the pesto side.
  4. Top with another slice of bread (pesto side down).
