  • 200g whole milk
  • 100g active sourdough starter
  • 70g cane sugar
  • 1 large egg
  • 430g bread flour
  • 5g sea salt
  • 8 tbsp unsalted butter (113g)
  • Filling: 5 tbsp unsalted butter, ½ cup cane sugar, 2 tbsp cocoa powder, 1 cup semi-sweet chocolate chips
  • Topping: ¼ cup whole milk, ¼ cup cocoa powder, 1 cup powdered sugar, 1 tsp vanilla

Instructions

  1. In a large bowl, combine whole milk and active sourdough starter. Whisk in cane sugar and gently beat in the egg until well mixed.
  2. Gradually add bread flour and sea salt; stir until it forms a shaggy dough.
  3. Knead on a floured surface for about 8-10 minutes until smooth and elastic.
  4. Place in a greased bowl and cover with a damp cloth; let rise for 4-6 hours until doubled.
  5. While waiting, mix filling ingredients (butter, sugar, cocoa powder) until creamy; fold in chocolate chips.
  6. Roll out dough to a rectangle (½ inch thick), spread filling evenly, roll tightly into a log, and slice into equal pieces.
  7. Arrange slices in a greased dish; cover and let rise for another hour.
  8. Preheat oven to 350°F (175°C) and bake for about 30 minutes until golden brown.
  9. For the topping, whisk together milk, cocoa powder, powdered sugar, and vanilla; drizzle over warm rolls.
