  • 1/2 cup vegetable oil or melted butter
  • 1 cup light brown sugar (packed)
  • 1 egg yolk
  • 1 teaspoon vanilla extract
  • 1 1/3 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon salt
  • 2/3 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cookie sheet with parchment paper.
  2. In a large bowl, mix together the mashed banana, vegetable oil (or melted butter), and brown sugar until well combined.
  3. Add the egg yolk and vanilla extract, stirring until fully integrated.
  4. Gradually mix in the flour, baking soda, cinnamon, and salt until no dry flour remains.
  5. Gently fold in the chocolate chips.
  6. Scoop out one-inch balls of dough onto the prepared sheet, leaving space between each cookie.
