  • 6 boneless beef chops
  • 4 cups thinly sliced potatoes
  • 2 cups shredded cheddar cheese
  • 2 cups milk
  • 1/2 cup chicken broth
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 2 tbsp olive oil
  • 2 tbsp all-purpose flour
  • 1 tsp dried thyme
  • 1/2 tsp paprika
  • 2 tbsp butter
  • 1 small onion thinly sliced
  • Fresh parsley chopped (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Season the beef chops with salt, pepper, garlic powder, and onion powder.
  3. In a skillet, heat olive oil over medium-high heat and brown each side of the beef chops for about 3-4 minutes.
  4. Sauté sliced onions in the same skillet with melted butter until soft.
  5. Make the cheese sauce by whisking flour into the onions, then gradually adding milk and chicken broth until smooth.
  6. Stir in thyme, paprika, and one cup of shredded cheddar cheese until melted.
  7. Layer half of the sliced potatoes in a greased baking dish, pour half of the cheese sauce over them, and top with browned beef chops.
  8. Add remaining potatoes and cheese sauce on top before sprinkling another cup of cheddar cheese.
  9. Cover with foil and bake for 45 minutes; remove foil and bake for an additional 15 minutes until golden brown.
  10. Let rest for 10 minutes before serving.
