  • 1.5 lbs boneless, skinless chicken breasts or thighs
  • 1 large yellow onion, finely chopped
  • 46 cloves garlic, minced
  • 1 tablespoon dried Italian seasoning
  • 4 cups low-sodium chicken broth
  • 1.5 cups uncooked orzo pasta
  • 4 oz cream cheese, softened
  • 3/4 cup freshly grated Parmesan cheese
  • Fresh parsley, chopped

Instructions

  1. Sear the chicken in olive oil until golden brown (about 2 minutes per side). Remove and set aside.
  2. In the same pot, sauté onions until translucent (about 4-5 minutes). Add garlic and Italian seasoning; cook for another minute.
  3. Deglaze with white grape juice (optional) and scrape up browned bits.
  4. Nestle the chicken back into the pot and pour in chicken broth. Sprinkle half of the parsley over the top.
  5. Cover and set slow cooker on LOW for 5-7 hours or HIGH for 3-4 hours.
  6. Once cooked, shred the chicken directly in the pot. Stir in uncooked orzo and cook on HIGH for an additional 15-20 minutes until al dente.
  7. Fold in cream cheese and Parmesan cheese until melted and creamy. Garnish with remaining parsley before serving.
